1. ¼ cup of taco seasoning
2. 2 tablespoons of fresh lime juice (from 1-2 limes)
3. 1 tablespoon of extra-virgin olive oil
4. 2 lbs of boneless, skinless chicken breast, cut against the grain into ½-inch-thick slices
5. 1 red bell pepper, thinly sliced
6. 1 yellow bell pepper, thinly sliced
7. 1 green bell pepper, thinly sliced
8. 1 small red onion, halved and thinly sliced
1. 12 (6-inch) corn or flour tortilla, warmed
2. Salsa or hot sauce
3. Sliced avocado
4. Sour cream
5. Fresh cilantro
6. Lime wedges
1. Preheat the oven to 375 degrees Fahrenheit with a rack in the center position.
2. In a large bowl, stir together the taco seasoning, lime juice, and olive oil. Add the chicken, bell peppers, and onion and toss to coat. Spread the mixture onto a rimmed sheet pan.
3. Bake for 15 to 20 minutes, or until the chicken is cooked through. If desired, turn the oven to broil and cook for 3 more minutes, or until the chicken is lightly charred.
4. Transfer the chicken and veggies to a serving dish. Serve with warm tortillas, salsa, avocado, sour cream, fresh cilantro, and lime wedges, if desired.
