Shaved Beef Teriyaki Bowl

From the kitchen of a Lumen Member

Ingredients

1. 1 package Thai wheat noodles

2. 1 bunch broccolini, trimmed

3. 1 lb all-natural shaved beef steak

4. 1/3 cup General Tso’s stir-fry sauce (plus more to taste)

Instructions

1. Marinate the Beef: In a bowl, toss the shaved beef with the stir-fry sauce until evenly coated. Let marinate while you prep the other ingredients (about 10 minutes, or longer if time allows).

2. Cook the Beef: Heat a large skillet or wok over medium-high heat. Add the marinated beef in a single layer. Cook without stirring for 1–2 minutes to develop a good sear, then stir and continue cooking until just browned and cooked through. Add a little more sauce if desired.

3. Add Noodles & Broccolini: Add the Thai wheat noodles and broccolini directly to the skillet. Pour in a splash of water (2–3 tablespoons) to help steam the broccolini. Cover the pan and cook for 4 minutes.

4. Finish & Serve: Remove the lid and stir well until the noodles are heated through and fully coated in the sauce. Add more sauce to taste.
