From the kitchen of Erin and Drew P.
1. 2 cucumbers peeled and seeded
2. 1 small onion
3. 1 garlic clove
4. 1 cup of vinegar
5. juice of 1/2 lemon
6. 3 cups of water
7. Salt and white pepper to taste
8. Pita Bread or Chips
1. High quality Olive Oil
2. Red Pepper Flakes
3. Parsley
4. Fresh Lemon
1. Slice the cucumbers and onion into thin slices
2. Smash the garlic clove.
3. Mix with all of the other ingredients in a container with a lid that is large enough to hold them and marinate in the fridge at least 4 hours. Preferably overnight.
4. Strain and reserve the juice.
5. Pulse, in a food processor. Do not over blend. It should be chunky not pureed. Add enough of the remaining liquid to the consistency that you want. Should not be soupy. Add salt and white pepper to taste. You can use black pepper it will just show the specks.
6. Serve in a dish with warmed pita bread or pita chips.
You may want to add a drizzle of good olive oil, red pepper flakes for a little heat and chop parsley for freshness. An extra squeeze of lemon is also a nice touch.
