1. 1 lb. Chicken breast (3), shredded
2. (1) 15.25 oz can corn, drained
3. (1) 15.25 oz can black beans, drained
4. (1) 15.25 oz can mild chili beans*
5. (1) 15.25 oz can diced tomatoes
6. (1) can Rotel tomatoes w/ chiles*
7. (1) 15.25 oz can chicken broth**
8. (1) package taco seasoning
9. (1) package powdered ranch dressing
* Can use Hot chili beans and Hot Rotel for more spice
** May need more chicken broth based on preferred consistency (soup vs stew)
1. Add all ingredients in medium/large pot, bring to a boil, then simmer for 2 hours.
2. Optional: serve with warm tortillas or tortilla chips, avocado, sour cream and/or cheddar cheese.
