1. 1 apple, cut into matchsticks
2. 2 English cucumbers, cut into matchsticks
3. 2 green onions, sliced
4. ¼ cup mayonnaise
5. 3 tbsp Dijon mustard
6. 2 tbsp apple cider vinegar
7. ¼ cup honey
8. ¼ cup water
9. 2 cups rotisserie chicken, shredded
10. salt
11. black pepper
12. 9 slices whole grain bread, toasted
1. To prepare slaw, mix apple, cucumbers, green onions, and mayonnaise in a bowl. Refrigerate until ready to serve.
2. Heat a skillet over medium-high heat. Add mustard, vinegar, honey, and water. Add chicken and cook until heated through, about 2-3 minutes. Season to taste with salt and pepper.
3. To serve, top bread with chicken and slaw.
